I basically just make an extra veg-packed omelette (to the point where it doesn't resemble an omelette anymore). I included 2 small eggs, cherry tomatoes, kale, spinach, basil and lots of sweetcorn! I don't like to put cheddar in here, because I love to put Philadelphia on my Wrap which melts and tastes truly magical!
I then plonk my omlette-y mess onto half of my wrap and give it a season with salt and pepper. It's then time to fold it over and heat it on both sides. You can easily do this in a pan, but I like to cheat and put it in the sandwich press (if you don't have one of these, I thoroughly recommend getting one. They're pretty life changing)
Okay, Now I'm feeling hungry...
